Healthy Summer Snacking

With Fourth of July weekend coming up we thought we'd share some of our favorite snacks for summer. These are hydrating, light and delicious!


Watermelon Feta Salad

We love eating this hydrating salad! It's a great thing to bring to a picnic or potluck.

Cut a seedless watermelon into bit sized chunks and put it in a bowl. Add some chopped fresh mint, 3 ounces of feta cheese, the juice of a lime and a drizzle of olive oil. Season with salt and pepper, toss and serve.


Pesto Hummus

This one is so simple and flavorful! We love using basil all summer long.

Either buy or make some hummus and pesto and combine them for an extra fresh dip to be served with fresh veggies or gluten free crackers!


Mango Avocado Salsa

This dip is the best! Serve it with some veggies or tortilla chips or on top of some grilled salmon or chicken.

Cut up 1 fresh mango, 1 avocado, 1/2 jalapeño (optional), 1/4 red onion, a handful of cilantro. Combine with the juice of one lime and season with salt and pepper.


Corn & Black Bean Salad

This is a great snack or side dish and can also be served with tortilla chips.

Combine 1 can of drained and rinsed black beans, 2 cups of fresh corn kernels, 1/2 chopped red onion, 1 chopped red bell pepper, and a handful of cilantro. Dress with juice of a lime and a drizzle of olive oil and season with salt & pepper.
